L'acide phytique ou phytate est un constituant antinutritionnel des aliments d'origine v g tale, qui forme une grande vari t de sels insolubles avec des min raux tels que le phosphore, le calcium, le zinc, le magn sium et le cuivre. L'acide phytique est galement connu pour former des complexes avec les prot ines et les enzymes prot olytiques (pepsine et trypsine). En raison de l'absence d'enzyme phytase endog ne, qui hydrolyse l'acide phytique, le phosphore, le calcium, les prot ines et d'autres nutriments li s sont biologiquement moins disponibles pour la volaille. As dietas para aves de capoeira suplementadas com fitase microbiana resultam num melhor desempenho em termos de crescimento e num aumento da digestibilidade e da disponibilidade de f sforo, c lcio, zinco e cobre ligados ao fitato.
