Dieses Buch bietet neue Einblicke in die Wirkung phenolischer Verbindungen im Wein auf die Verhinderung des Verderbs durch unerw nschte Milchs urebakterien und zielt darauf ab, eine m gliche Beziehung zwischen der chemischen Struktur der phenolischen Verbindungen und der beobachteten antimikrobiellen Aktivit t herzustellen. Zun chst wurde die Fraktion der phenolischen Verbindungen mit niedrigem Molekulargewicht aus handels blichen Rotweinen aus der Region Salta und Tucum n isoliert und ihr Gehalt an phenolischen Verbindungen qualitativ und quantitativ charakterisiert. Anschlie end wurde die Wirkung dieser phenolischen Fraktionen und phenolischen Verbindungen einzeln oder in Kombination auf die Lebensf higkeit von Bakterien, die aus Weinen aus derselben Region isoliert wurden, bestimmt. Die Auswirkungen auf die Zellintegrit t, die Histamin- und die Exopolysaccharidproduktion wurden auch mit Hilfe der Transmissionselektronenmikroskopie untersucht. Auf der Grundlage der erhaltenen Ergebnisse wurde eine qualitative Struktur-Aktivit ts-Beziehungsstudie durchgef hrt.

This book provides new insights into the effect of phenolic compounds present in wine on the prevention of spoilage by undesirable lactic acid bacteria and aims to establish a possible relationship between the chemical structure of phenolic compounds and the observed antimicrobial activity. First, the fraction of low molecular weight phenolic compounds was isolated from commercial red wines from the region of Salta and Tucum n and their content of phenolic compounds was qualitatively and quantitatively characterized. Then, the effect of these phenolic fractions and phenolic compounds individually or in combination on the viability of bacteria isolated from wines of the same region was determined. The effect on cell integrity was also evaluated by Transmission Electron Microscopy, histamine and exopolysaccharide production. From the results obtained, a qualitative Structure-Activity Relationship study was performed.
