El Vaccinium meridionale conocido como Gongapa, fruto poco aprovechado su producci n conocida a nivel local el fruto presenta grandes propiedades nutrace ticas, por poseer propiedades antioxidantes con alto contenido en vitamina A. el objetivo fue Evaluar y aprovechar las propiedades nutricionales, sensoriales y fisicoqu micas del Vaccinium meridionale mediante la elaboraci n de vino. El fruto (gongapa) fue envasado en 4 tipos de envases para su an lisis de calidad y rendimiento. La elaboraci n inicio con recepci n de la materia prima, desinfecci n y despalillar, se pas a estrujar, diluir el mosto, agregando la levadura, dejando fermentarlo una vez fermentado se pas a descubar, filtrar, pasteurizar, clarificar y finalmente filtro restos de polvillo, se envaso en 4 tipos de envases (vidrio transparente, vidrio verde, pl stico blanco y vidrio mbar). Para determinar la muestra de materia prima se caracteriz sus propiedades fisicoqu micas del vino, su caracterizaci n se hizo en diferentes d as el an lisis de pH, solidos solubles.
