L'amarena (Eugenia uniflora L. - Myrtaceae) una specie vegetale endemica della regione del Nord Fluminense e presenta sostanze fenoliche ad azione antiossidante. Considerati i vantaggi presentati, l'obiettivo di questo libro presentare la lavorazione dello yogurt greco con latte di bufala e l'aggiunta dello sciroppo di amarena come fonte di aggregazione dei composti bioattivi del frutto nel prodotto finale. Pertanto, l'aggiunta di sciroppo in diverse percentuali allo yogurt formulato ha evidenziato l'elevato potenziale di aggregazione dell'acido ascorbico e degli antociani. stato possibile valutare che all'aumentare della concentrazione dello sciroppo stato quantificato un livello pi elevato di questi composti e attraverso l'indice di accettabilit delle formulazioni, che stato superiore al 70%, abbiamo un nuovo prodotto alternativo abbinato all'assunzione di composti benefici per la salute e la formulazione con aggiunta del 20% di sciroppo di amarene si rivelata la preferita dai giudici.

The sour cherry (Eugenia uniflora L. - Myrtaceae) is a plant species endemic to the North of Rio de Janeiro and contains phenolic substances with antioxidant action. In view of these benefits, the aim of this book is to present the processing of Greek yogurt with buffalo milk and the addition of sour cherry syrup as a source of adding the fruit's bioactive compounds to the final product. The addition of the syrup in different percentages to the formulated yogurt showed the high aggregation potential of ascorbic acid and anthocyanins. It was possible to assess that with the increase in the concentration of syrup, a higher content of these compounds was quantified and through the acceptability index of the formulations, which was over 70%, we have a new alternative product combined with the ingestion of compounds that are beneficial to health and the formulation with 20% added sour cherry syrup proved to be preferred by the judges.

In the contemporary context of increasing inequality and various forms of segregation, this volume analyzes the transition to neoliberal politics in Santiago de Chile. Using an innovative methodological approach that combines georeferenced data and multi-stage cluster analysis, Méndez and Gayo study the old and new mechanisms of social reproduction among the upper middle class. In so doing, they not only capture the interconnections between macro- and microsocial dimensions such as urban dynamics, schooling demands, cultural repertoires and socio-spatial trajectories, but also offer a detailed account of elite formation, intergenerational accumulation, and economic, cultural, and social inheritance dynamics.
