**2025 Textbook and Academic Authors Association (TAA) Textbook Excellence "Texty" Award Winner** The sixth edition of Introduction to Food Engineering, with revised and updated content, aims to enhance the learning of quantitative approaches to designing food processing operations. The book, translated into six languages, is widely acclaimed in teaching and learning food engineering by many generations of students worldwide. It is notable for blending engineering principles based on fundamental physics applied to commonly used and emerging food processing technologies. The chapters are written to facilitate the instructors in presenting lectures in an organized sequence for effective teaching. Numerous solved examples, detailed steps, and end-of-chapter problems of industrial relevance are included to help students learn underlying concepts and their applications. Many illustrations, with companion web-based animations, aim to improve the subject's comprehension. A new chapter introduces quantitative aspects of cleaning and sanitation in food operations to enhance food safety. Quantitative aspects of emerging electrotechnologies for food processing are explained. Spreadsheet-based problem-solving techniques are included for designing unit operations with “what-if” analysis. Practicing professionals in the industry will find an extensive collection of reference data helpful in the design and operation of industrial food processes.

In keeping with increasing professionalism in nonprofits Michael O'Neill and Dennis R. Young have as editors produced a book, Educating Managers of Nonprofit Organizations, that seeks the best ways to educate the persons who are rising to the top in charitable enterprises. Apprenticeships still retain a high value, say some of the contributors to the book, but they are not often practical. Nonprofit management as an academic specialty is considered at length, and on-the-job course work is examined. In the course of the discussion the management of nonprofits is carefully dissected, and some of its most troublesome areas are revealed. LRC NewsbriefEducating Managers of Non-Profit Organizations examines the question of how to most productively train managers for these complex and diverse organizations whose non-profit basis makes them unsuited to many of the traditional business programs. The presentations are broad-based yet detailed, making this volume valuable to a wide range of readers: managers and policy-makers of non-profit organizations, scholars of managerial education, management program funders, consulting and technical service groups, as well as non-profit organization leaders. The editors have assembled 15 papers from highly prestigious scholars, practitioners, and researchers to present a clear and thorough coverage of the topic. Included are expert articles discussing: the types of non-profit managers; curricula for such managers; differences between non-profit and traditional organizations; the non-profit organization's place in higher education.

The approach to teaching the concepts of food processing to the undergrad uate food science major has evolved over the past 40 years. In most under graduate food science curricula, food processing has been taught on a commodity basis. In many programs, several courses dealt with processing with emphasis on a different commodity, such as fruits and vegetables, dairy products, meat products, and eggs. In most situations, the emphasis was on the unique characteristics of the commodity and very little empha sis on the common elements associated with processing of the different commodities. Quite often the undergraduate student was allowed to select one or two courses from those offered in order to satisfy the minimum standards suggested by the Institute of Food Technologists. The current 1FT minimum standards suggest that the undergradu ate food science major be required to complete at least one food processing course. The description of this course is as follows: One course with lecture and laboratory which covers general characteristics of raw food materials, principles offood preserva tion, processing factors that influence quality, packaging, water and waste management, and sanitation. Prerequisites: general chemistry, physics, and general microbiology.
From Saigon to Katum takes us on a side-by-side journey of two men who experienced the American Vietnam War from very different perspectives; Bourret from a classical music background set in rural Americana and Huynh from the precarious rice fields of the Mekong Delta in the time of war. The chapters unfold to allow the reader to view each men's trek from childhood into adulthood as each traverses his new surroundings and understanding of a war neither asked to be part of. From Saigon to Katum allows us to journey through two men's experiences as their lives are inexorably transformed. Before becoming a U.S. draftee, Dennis R. Bourret's only wish was to follow his dream of bestowing music on people's lives in an evocative and meaningful way. As a successful student from the Mekong rice fields, Sam Huynh's only wish was for his family to survive and for his nation to heal and be at peace after generations of misery. Fortunately, both men not only survived the war, but years later, they had the wherewithal to document their experiences for us to witness and contemplate. Their combined voices - while distinct in manner, perspective, and recall - create a fuller personal experience of the American Vietnam War, allowing us a foothold in coming to terms with the universal tragedies of a miscalculated war. Sam and Dennis both hope future generations gain the wisdom to learn from their tribulations.
