Milk

Stuart Patton

Milk is the one food that sustains life and promotes growth in all newborn mammals, including the human infant. By its very nature, milk is nutritious. Despite this, it has received surprisingly little attention from those interested in the cultural impact of food. In this fascinating volume, Stuart Patton convincingly argues that milk has become of such importance and has so many health and cultural implications that everyone should have a basic understanding of it. This book provides this much-needed introduction. Patton's approach to his subject is comprehensive. He begins with how milk is made in the lactating cell, and proceeds to the basics of cheese making and ice cream manufacture. He also gives extensive consideration to human milk, including breasts, lactation, and infant feeding. Pro and con arguments about the healthfulness of cows' milk are discussed at length and with documentation. Patton explores the growing gap between the public's impressions of milk, and known facts about milk and dairy foods. He argues that the layperson's understanding of milk has deteriorated as a result of propaganda from activists anxious to destroy milk's favorable image, misinformation in the media, and scare implications from medical research hypotheses.
Milk Secretion: The Study of the Physiology and Inheritance of Milk Yield and Butter-Fat Percentage in Dairy Cattle
""Milk Secretion"" is a comprehensive study of the physiology and inheritance of milk yield and butter-fat percentage in dairy cattle. Written by John Whittemore Gowen, this book delves into the various factors that influence milk production in cows, including genetics, nutrition, and environmental conditions. The author explores the complex mechanisms behind milk secretion, including the role of hormones, enzymes, and other biological processes. The book also covers the inheritance patterns of milk yield and butter-fat percentage, providing insights into how these traits are passed down from one generation to the next. With its detailed analysis and scientific approach, ""Milk Secretion"" is an invaluable resource for researchers, breeders, and anyone interested in the science of dairy farming. This scarce antiquarian book is a facsimile reprint of the old original and may contain some imperfections such as library marks and notations. Because we believe this work is culturally important, we have made it available as part of our commitment for protecting, preserving, and promoting the world's literature in affordable, high quality, modern editions, that are true to their original work.

Milk in Spain and the History of Diet Change

Praise for Milk in Spain and the History of Diet Change:Unpacks the fascinating journey of Spain's relationship with dairy products. Once a symbol of moving from poverty to prosperity, fresh milk's appeal has dwindled as consumers favour plant-based drinks and gourmet yogurts and cheeses. Spain's late adoption and early shift out of fresh milk highlight a broader trend: people often do not act in their own best interests. This stimulating book examines the reasons behind these choices, revealing the complex interplay between health, commercial innovation, culture, and consumer behaviour. A thought-provoking exploration of how food choices reflect deeper societal shifts. - Avner Offer, University of Oxford, UKA triumph of food history! This is an important book on changing food systems since 1950. While it focuses on Spain, it has wider implications for dietary shifts and the food industry in Western Europe. Milk is the product under consideration and Fernando Collantes cleverly teases out the main trends in supply and consumption using a combination of detailed empirical evidence and explanatory theoretical models. The result is a satisfying mix of nutritional, economic, and socio-cultural insights. While it may seem obvious – ‘blanco y en botella, leche’ – I now realise that the story of milk is complex, and this book should be read by anyone interested in the trends behind modern food history. - Peter Atkins, Durham University, UKIn barely three generations the Spanish diet has changed beyond recognition. The traditional concerns around nutritional health and scarcity have been mostly left behind, but they have given way to new problems linked to excess. In this book Fernando Collantes shows how the dairy industry has been central to this societal shift. From widespread calcium deficiency in the 1950s to the more recent, and controversial, turn to highly processed foods, it provides a recent history of diet change in Spain. Probing the reasons behind why this shift has occurred, and how, it shows that when it comes to food society, politics, economics and the law are intrinsically linked.Taking the reader beyond the world of food, Milk in Spain and the History of Diet Change combines qualitative and quantitative methods to position diet change within the broader debate on consumer society and ‘the good life’. Contrasting two models of food consumption, it shows that unless public policy takes the challenge of affluence seriously, the food system can become an obstacle to a better society.
