Die Ergebnisse der Studie zeigten deutlich, dass Gammabestrahlung eine signifikante Wirkung auf die Reduzierung von TVC, TCC und TYMC hatte. Die Bestrahlung bewahrte den N hrwert des Fleisches und erh hte die Haltbarkeit des Fleisches, ohne die ern hrungsphysiologischen und sensorischen Eigenschaften des Fleisches zu ver ndern. Unter den Behandlungen zeigte die h chste Bestrahlungsdosis (6,0 KGy) die besten Ergebnisse in Bezug auf die allgemeine Akzeptanz, die Kontrolle von Mikroorganismen und die Verl ngerung der Haltbarkeit von Rindfleisch.

I risultati dello studio hanno dimostrato chiaramente che l'irradiazione con raggi gamma ha un effetto significativo sulla riduzione di TVC, TCC e TYMC. L'irradiazione ha preservato il valore nutritivo della carne e ne ha aumentato la durata di conservazione senza modificarne le propriet nutrizionali e sensoriali. Tra i trattamenti, la dose di irradiazione pi alta (6,0 KGy) ha mostrato i migliori risultati in termini di accettabilit complessiva, controllo dei microrganismi e prolungamento della durata di conservazione della carne bovina.

A irradia o preservou o valor nutritivo da carne e aumentou o prazo de validade da carne sem alterar as propriedades nutricionais e sensoriais da carne.
