Este trabajo eval a algunas de las propiedades sensoriales m s importantes, como lo son: textura, color y nivel de agrado, de bu uelos que fueron elaborados de manera artesanal con diferentes porcentajes de harina de frijol y harina de trigo (100% HT, 90% HT- 10% HF, 80% HT - 20% HF y 70% HT - 30% HF). Se realizaron pruebas sensoriales con jueces consumidores utilizando un dise o experimental ANOVA unifactorial. Los resultados muestran estad sticamente que no hubo diferencias significativas entre las propiedades evaluadas en el presente trabajo. Se concluye que la combinaci n de 80% harina de trigo y 20% harina de frijol es una opci n viable para la elaboraci n de bu uelos, manteniendo caracter sticas similares al tratamiento con 100% harina de trigo.
