Cependant, gr ce aux progr s technologiques, la minimisation de la production de d chets dans plusieurs industries vinicoles a attir l'attention de beaucoup. Les d chets de vinification sont consid r s comme une source peu co teuse de compos s antioxydants et ph noliques. Par cons quent, cette tude sp cifique visait d velopper les conditions d'extraction optimales pour l'activit antioxydante et le contenu ph nolique total en utilisant cette concentration de solvant. Ces compos s peuvent tre utilis s comme conservateurs alimentaires et colorants naturels dans les industries alimentaires.

Pour l' tude In vitro, notre extrait a montr d'une part des activit s antioxydantes totales tr s importantes en rapport avec sa richesse en polyph nols, en flavono des et en tanins. Pour la formulation des cr mes cosm tiques, deux cr mes ont t synth tis es: l'une base des granules de marc de caf et l'autre base de sa huile. Leurs valuations ont montr qu'elles sont dot es d'un pouvoir amincissant important. En plus, elles sont d pourvues de tout germe et elles sont non irritantes. Pour l' tude In vivo, l'int gration de marc de caf dans l'alimentation a provoqu une diminution de la moyenne des poids corporels des rats. Toutefois, des analyses biochimiques ont d montr une diminution du taux des triglyc rides sanguins accompagn d'une atteinte h patique confirm s par une tude histologique r alis e sur des fragments de foie.
