Les tanins sont des antioxydants vegetaux hydrosolubles. Dans le but de les utiliser pour la protection des produits gras contre l''oxydation, ils ont ete rendus liposolubles par greffage de chaines carbonees au moyen de modifications chimiques simples, douces et peu couteuses en termes d''economie et d''ecologie. A cette fin, des conditions reactionnelles adequates ont ete prealablement mises au point a l''aide de substrats modeles de tanins. Ensuite, l''application des memes methodes aux tanins issus de chataignier (Castanea sativa Mill.), de chene (Quercus robur L.), de quebracho (Schinopsis balansae Engl.) et de pepins de raisin (Vitis vinifera L.) a ete globalement satisfaisante. Tous les derives de molecules modeles ou de tanins bruts ont acquis un caractere lipophile tel qu''avere par la mesure du coefficient de partage entre l''eau et l''octanol. Les proprietes antioxydantes des molecules modeles et des tanins bruts et modifies ont ete mesurees par deux methodes: inhibition de l''oxydation induite du linoleate de methyle et reactivite avec le radical libre 2,2-diphenyl-picrylhydrazyle (DPPH). Les proprietes antioxydantes sont bien conservees apres modification.
