Infolgedessen fallen in der Fischverarbeitungsindustrie neben verschiedenen nahrhaften Produkten auch Abf lle an, die nicht immer ordnungsgem entsorgt werden und Umweltprobleme verursachen k nnen. In diesem Sinne ist der Einsatz der MSM-Technologie (Mechanically Separated Meat) eine interessante Alternative zur F rderung der Verwertung von an den Schlachtk rpern haftendem Fleisch. Die Umwandlung von Abf llen in neue Produkte, die f r die menschliche oder tierische Ern hrung verwendet werden k nnen, ist eine sehr wichtige Praxis, die eine zus tzliche Einkommensquelle f r die verarbeitende Industrie schaffen kann. Ziel dieser Studie war es, die Ausbeute des Verfahrens zur Extraktion von SMC aus den Karkassen des Atlantischen Lachses (S. salar) in einem Fischlager in Belo Horizonte, MG (Brasilien), zu bestimmen. Es wurde ein Protokoll f r die Herstellung von Kibbeh aus dem gewonnenen SMC vorgeschlagen und die wirtschaftliche Rentabilit t der Anschaffung der f r die Herstellung von SMC und Lachskibbeh erforderlichen Ausr stung untersucht.
