Mikotoksyny są drugorzędnymi metabolitami produkowanymi przez grzyby i stanowią potencjalne zagrożenie dla zdrowia ludzkiego, jeśli są obecne w żywności. Wśr d mikotoksyn najważniejsze i najczęściej badane są aflatoksyny. Obecnośc grzyb w toksycznych w mące kukurydzianej niekoniecznie oznacza obecnośc mikotoksyn, ale stanowi ostrzeżenie dla większej uwagi poświęcanej praktykom rolniczym, zar wno przy wyborze ziarna do sadzenia, zbieraniu kukurydzy, transporcie, przetwarzaniu na mąkę, przechowywaniu i wprowadzaniu do obrotu tego produktu.
