"Summer is upon us and I have quite a few events planned for this time of year. There are currently 17 birthdays, 4 weddings, 2 company picnics, and several holidays entertaining friends and family. I have to host or attend each of these functions, and bring a dessert dish, so this year I am focusing on Ice Cream Cakes. What do you have for me?" Ice Cream Cakes are a favorite for just about any function. The big trick is keeping the cool enough that they don't melt before the cake gets carved and passed around to the party goers. There are hundreds of recipes for Ice Cream Cake and I have compiled a long list of my favorites for this recipe book. I have yet to make one of these and have it go to waste; everybody loves ice cream cake.
