Questa attivit relativamente recente, soprattutto in Brasile, per cui molte persone non ne sono ancora a conoscenza. Sebbene l'allevamento di quaglie in Brasile non abbia la stessa tradizione consolidata dei Paesi europei, abbiamo gi grandi produttori e ricercatori di alto livello in questo settore della conoscenza scientifica. Abbiamo scritto questo libro come una guida, uno strumento di supporto, destinato agli studenti delle aree zootecnica, veterinaria e agronomica, oltre che ai tecnici e ai produttori, ma ci auguriamo che venga letto da tutti coloro che lavorano e amano questi uccelli. Questo libro contribuir a descrivere i punti principali dell'allevamento della quaglia da ingrasso e/o da deposizione in relazione alla gestione produttiva, riproduttiva e nutrizionale. Con questo libro il lettore sar in grado di comprendere meglio dalle caratteristiche di questo uccello a come utilizzare le tecniche di metodologia scientifica nella ricerca sulla quaglia.

Quail farming is the raising of quail for the production of eggs or meat. This activity is relatively recent, mainly in Brazil, so many people are still unaware of it. Although quail farming in Brazil does not have the same consolidated tradition as in European countries, we already have great producers and high-level researchers in this area of scientific knowledge. We wrote this book as a guide, a support tool, intended for students of zootechnical, veterinary and agronomic areas, as well as technicians and producers, but we hope it will be read by all those who work with and like these birds. This book will help to describe the main points of raising quail for fattening and/or laying in relation to productive, reproductive and nutritional management. With this book the reader will be able to better understand from the characteristics of this bird to how to use the techniques of scientific methodology in quail research.

Unter Wachtelzucht versteht man die Aufzucht von Wachteln zur Erzeugung von Eiern oder Fleisch. Diese T tigkeit ist relativ neu, vor allem in Brasilien, so dass sie vielen Menschen noch nicht bekannt ist. Obwohl die Wachtelzucht in Brasilien nicht die gleiche gefestigte Tradition hat wie in den europ ischen L ndern, gibt es bei uns bereits gro e Erzeuger und hochrangige Forscher auf diesem Gebiet der wissenschaftlichen Erkenntnisse. Wir haben dieses Buch als Leitfaden, als Hilfsmittel f r Studenten der Tierzucht, der Veterin rmedizin und der Agronomie sowie f r Techniker und Erzeuger geschrieben, aber wir hoffen, dass es von allen gelesen wird, die mit diesen V geln arbeiten und sie m gen. Dieses Buch wird dazu beitragen, die wichtigsten Punkte der Aufzucht von Wachteln f r die Mast und/oder das Legen in Bezug auf das Produktivit ts-, Reproduktions- und Ern hrungsmanagement zu beschreiben. Mit Hilfe dieses Buches wird der Leser in der Lage sein, die Eigenschaften dieses Vogels besser zu verstehen und die Techniken der wissenschaftlichen Methodik in der Wachtelforschung anzuwenden.

L'allevamento delle quaglie relativamente nuovo, soprattutto in Brasile, e per questo molte persone non lo conoscono ancora. Anche se non abbiamo la tradizione consolidata nei Paesi europei, abbiamo gi grandi produttori e ricercatori di alto livello in questo settore di conoscenza. I nostri produttori e ricercatori conducono produzioni o esperimenti seguendo istruzioni e procedure che garantiscono la qualit dei prodotti, la seriet dei risultati e la replicabilit del lavoro. Per diversi decenni, la principale preoccupazione dei nutrizionisti stata quella di soddisfare le crescenti esigenze nutrizionali di pollame e suini derivanti dai grandi progressi della genetica. Parallelamente all'attenzione per i requisiti nutrizionali per le massime prestazioni, pi recentemente si sviluppato un interesse per la modifica nutrizionale della composizione quantitativa e qualitativa delle carcasse. Grazie all'elevato livello di selezione genetica nei polli da carne, i nuovi ceppi commerciali hanno muscoli con un numero doppio di fibre muscolari e un diametro maggiore rispetto ai ceppi tradizionali. Tuttavia, tutti questi progressi genetici nelle prestazioni dei polli da carne hanno generato un effetto collaterale negativo, ovvero la comparsa di malattie metaboliche legate soprattutto ai muscoli del petto, come la miopatia del petto profondo o PSE. D'altra parte, uno degli aspetti pi affascinanti della carne suina che pu essere arricchita dal punto di vista nutrizionale. Ecco perch in questo libro si parla anche di come soddisfare le esigenze nutrizionali dell'uomo attraverso la gestione nutrizionale dei suini.

For several decades, the main concern of nutritionists has been to meet the growing nutritional requirements of poultry and pigs resulting from the great advances in genetics. Parallel to the focus on nutritional requirements for maximum performance, more recently there has been an interest in nutritionally altering the quantitative and qualitative composition of carcasses. With the high level of genetic selection in broilers, the new commercial strains have muscles with twice as many muscle fibres and a larger diameter than the traditional strains. However, all this genetic progress in broiler performance has generated an adverse side effect, which is the emergence of metabolic diseases especially related to the breast muscles, such as deep breast myopathy or PSE meat. On the other hand, one of the most fascinating aspects of pork is that it can be enriched nutritionally. That's why this book also discusses how to fulfil the nutritional needs of humans through the nutritional management of pigs.
