High Temperature Processing of Milk and Milk Products

High Temperature Processing of Milk and Milk Products

Hilton C. Deeth; Michael J. Lewis

This book covers many aspects of thermal processing of milk and milk products with particular focus on UHT processing. It commences with an overview of the major thermal processing technologies: thermisation, pasteurisation, extended-shelf-life (ESL), UHT and in-container sterilisation. It discusses the principles of the technologies, the processing and packaging equipment used, processing issues such as temperature-time profiles, heat stability, fouling and cleaning, and the quality and safety aspects of the products produced. It provides a balance of the engineering aspects of the processes and the chemical, microbiological and sensory aspects of the products. The changes that occur in products during processing and storage, and the related defects which can arise, are central to the book. The discussions of these changes will be an aid to industry personnel in identifying the causes of quality defects in these products and devising measures which can be taken to eliminate or minimise the defects.

Philadelphia Builds: Essays on Architecture

Philadelphia Builds: Essays on Architecture

"Michael Lewis deploys his gifts as a storyteller to convey the ideas, aspirations, vanities and struggles that gave form to Philadelphia's most important buildings. Written with ferocious passion and deep scholarship, these architectural histories frequently charmed me, occasionally provoked me, and ultimately left me with a richer understanding of the city I thought I already knew."--Inga Saffron, architecture critic, Philadelphia Inquirer, and author of Becoming Philadelphia In Philadelphia Builds, architecture critic Michael J. Lewis explains why Philadelphia has produced so many extraordinary architects, including Louis Kahn, Frank Furness, and Robert Venturi. Lewis has written about the architecture of his native city for over three decades, and Philadelphia Builds brings together twenty-two of his best essays―including one about Kahn's little-known project to design a memorial for Vladimir Lenin and another which is the first substantial profile of Willis G. Hale, cult hero of Philadelphia hipsters. Other essays treat William Penn's plan for his new Quaker city, the fierce competitions that gave the city its greatest civic monuments, and also contemporary buildings such as the Barnes Foundation. Richly illustrated with drawings and photographs throughout, Philadelphia Builds is an engaging account of the people and forces that shaped the city from the 1700s to the present day. Includes 120 b/w photographs and images.

City of Refuge

The vision of Utopia obsessed the nineteenth-century mind, shaping art, literature, and especially town planning. In City of Refuge, Michael Lewis takes readers across centuries and continents to show how Utopian town planning produced a distinctive type of settlement characterized by its square plan, collective ownership of properties, and communal dormitories. Some of these settlements were sanctuaries from religious persecution, like those of the German Rappites, French Huguenots, and American Shakers, while others were sanctuaries from the Industrial Revolution, like those imagined by Charles Fourier, Robert Owen, and other Utopian visionaries. Because of their differences in ideology and theology, these settlements have traditionally been viewed separately, but Lewis shows how they are part of a continuous intellectual tradition that stretches from the early Protestant Reformation into modern times. Through close readings of architectural plans and archival documents, many previously unpublished, he shows the network of connections between these seemingly disparate Utopian settlements--including even such well-known town plans as those of New Haven and Philadelphia. The most remarkable aspect of the city of refuge is the inventive way it fused its eclectic sources, ranging from the encampments of the ancient Israelites as described in the Bible to the detailed social program of Thomas More's Utopia to modern thought about education, science, and technology. Delving into the historical evolution and antecedents of Utopian towns and cities, City of Refuge alters notions of what a Utopian community can and should be.

The Bayeux Tapestry is one of the most celebrated surviving works of art, as well as recounting the story of one of the most famous episodes of British history. Yet much about the object itself remains a mystery; who commissioned it, and where, when and why was it made? In this introduction to the Tapestry, Michael Lewis looks not only at the story of the Tapestry itself, but also explores the design and production of this great artefact, and looks at how reliable the evidence it presents for 1066 actually is. In a fresh and dynamic approach to one of the 11th century's most famous survivors, this book attempts to dispel some of the myths attached to a traditional interpretation of the tapestry and its message.
Essays in Brewing Science

Essays in Brewing Science

Springer-Verlag New York Inc.

Essays in Malting and Brewing is an original and comprehensive examination of brewing from the perspective of a real brewer. Brewing texts generally use a sequential barley-beer-bottle organization that takes the reader systematically through the various stages of beer-making in a logical and informative way. This approach adequately communicates the essential operation. However, brewers think about all of the stages in the process that might affect a single property, such as beer color. Alternatively brewers might ponder the influence of such affective agents as modification or oxygen throughout the process. Essays in Malting and Brewing departs from the traditional sequential approach to pursue brewing in the manner a brew master approaches the process. It is structured to look down the length of the process for causes and effects. Each essay discusses a problem, a beer component, or a flavor, by following how this one item arises and how it changes along the way. This is a crucial feature to bear this in mind when reading the book because this organization brings together information and ideas that are not usually presented side-by-side. The essay format allows the reader to understand how the raw materials of brewing and the way they are handled impact on process performance and product quality. This new approach to an enduring subject is essential for the informed reader interested in the malting and brewing process.

Brewing is designed for those involved in the malting, brewing, and allied industries who have little or no formal training in brewing science. While some elementary knowledge of chemistry and biology is necessary, the book clearly presents the essentials of brewing science and its relationship to brewing technology. Brewing focuses on the principles and practices most central to an understanding of the brewing process, including preparation of malt, hops, and yeast; the fermentation process; microbiology and contaminants; and finishing, packaging, and flavor. The second edition gives more emphasis to engineering and technological aspects, with the three new chapters on water, engineering and analysis. Brewing, Second Edition, is both a basic text for traditional college, short, and extension courses in brewing science, and a basic reference for anyone in the brewing industry.

This new book updates and expands Harold Burton's classic book, UHT Processing of Milk and Milk Products, to provide comprehensive, state-of-the-art coverage of thermal processing of liquid and particulate foods. The food products covered now include soups, sauces, fruit juices, and other beverages, in addition to milk and milk products. Pasteurization, sterilization, and aseptic processing are all discussed, with emphasis on the underlying principles and problems of heat treatment of more viscous fluids, where streamline flow conditions are likely to prevail, and of products containing particles. Pasteurization and heat treatments designed to further extend the shelf life of pasteurized products are also discussed, and the pasteurization and sterilization processes are compared to highlight similarities and differences. Throughout, factors influencing the safety and quality of heated foods are emphasized. This book contains over 100 illustrations and 50 tables, as well as extensive cross-referencing and a comprehensive reference section.
