Die vorliegende Studie befasst sich mit: 1-Evaluierung der antimykotischen Aktivit t ausgew hlter Milchs urebakterien (4 Lactobacillus-St mme) gegen verschiedene Arten von Hefen und Schimmelpilzen in Labor-Agar-Medien. 2- Nachweis der Wirksamkeit ausgew hlter antimykotischer Milchs urebakterien zur Verhinderung des Wachstums von Hefen und Schimmelpilzen auf konzentriertem Joghurt (Labneh) und Untersuchung der Stabilit t ihrer antimykotischen Aktivit t w hrend der Lagerzeit. Die Pilzst mme wurden f r die k nstliche Kontamination von Labneh verwendet. 3-Antimykotischer Aktivit tstest: Zum Nachweis der antimykotischen Aktivit t wurden zwei verschiedene Methoden (die Overlay-Methode und die Disc-Assay-Methode) verwendet.

La pr sente tude porte sur: 1-Evaluer l'activit antifongique de bact ries lactiques s lectionn es (4 souches de Lactobacillus) contre plusieurs esp ces de levures et de moisissures en milieu agar de laboratoire. 2- D montrer l'efficacit des bact ries lactiques antifongiques s lectionn es pour pr venir la croissance des levures et des moisissures sur le yaourt concentr (Labneh), et tudier la stabilit de son activit antifongique pendant la p riode de stockage. Les souches de champignons ont t utilis es pour la contamination artificielle du labneh. 3-Dosage de l'activit antifongique: Deux m thodes diff rentes (la m thode du recouvrement et la m thode du disque), ont t utilis es pour d tecter l'activit antifongique.

Il presente studio si occupa di: 1-Valutare l'attivit antimicotica di batteri lattici selezionati (4 ceppi di Lactobacillus) contro diverse specie di lieviti e muffe in agar di laboratorio. 2- Dimostrare l'efficacia dei batteri lattici antimicotici selezionati per prevenire la crescita di lieviti e muffe sullo yogurt concentrato (Labneh), e studiare la stabilit della sua attivit antimicotica durante il periodo di conservazione. I ceppi di funghi sono stati utilizzati per la contaminazione artificiale del labneh. 3-Saggio dell'attivit antimicotica: Due metodi diversi (il metodo della sovrapposizione e il metodo del test del disco) sono stati utilizzati per rilevare l'attivit antifungina.

O presente estudo trata de: 1-Avaliar a actividade antif ngica de bact rias l cticas seleccionadas (4 estirpes de Lactobacillus) contra v rias esp cies de leveduras e bolores em meios de gar de laborat rio. 2- Demonstrar a efic cia de bact rias cidas l cticas antif ngicas seleccionadas para prevenir o crescimento de leveduras e bolores em iogurte concentrado (Labneh), e estudar a estabilidade da sua actividade antif ngica durante o per odo de armazenamento. As estirpes de fungos foram utilizadas para a contamina o artificial do labneh. Ensaio da actividade dos 3 antif ngicos: Dois m todos diferentes (o m todo de sobreposi o e o m todo de ensaio em disco), foram utilizados para detectar a actividade dos antif ngicos.
